Shopping
Look for a symmetrical eggplant with a smooth, uniformly colored skin. Avoid tan patches, wrinkles, scars, or bruises. on the skin indicate decay, which will appear as discolorations in the flesh beneath. Select an eggplant, 3″ to 6″ in diameter.
Storage
Refrigerate eggplants in a plastic bag for up to 4 days.
