Description
There are two types of sweet potato. One is moist with orange-flesh and the other is dry with yellow-flesh.

Year-round
Peak early in winter.

Shopping
Select sweet potatoes that are heavy for their size, smooth, and firm. Avoid bruises, cracks, wrinkles, stickiness, sprouting, decay, shriveled potatoes, sunken areas, and black spots.

Storage
Sweet potatoes should be kept in a cool, dry, dark place. Never refrigerate. They should be used within a week or two of purchase.
