California peaches: April through October. Peak in July and August.
Locally grown peaches: midsummer through early fall.
Mexico, Chile, and New Zealand: November through April.
Choose plump, medium to large, unwrinkled, soft, fragrant peaches. Avoid rock hard, dark-colored, mushy, bruised peaches. Avoid green around the stem.
Handle gently. Ripen in a cool room stem end down. Refrigerate peaches up to five days in the crisper.
