Nopales are the edible thick, green fleshy branches of the prickley pear cactus. Their flavor resembles that of bell peppers or asparagus.
Nopales are available in Mexican grocery stores and specialty produce markets year round. They peak in the spring.
Choose small, bright-green pads that are firm, glossy, and resilient. Avoid wrinkeled, limp or dry nopales.
Refrigerate nopales for one week. Lightly wrap in plastic.
