Once stripped of their nubbly reddish-brown shells, these lychees look like large white grapes, each with a single large, glossy seed within its pale flesh. They have a sweet, flowery fragrance and flavor.
Lychees are available from June to September. Canned and dried lychees are sold in Asian groceries.
Select heavy, uncracked lychees with the stems still attached. Choose lychees with thin skin and a rose color.
Refrigerate for up to three weeks.
