The two types of yuca are sweet and bitter. Sweet yuca has a sweet, nutty flavor and a creamy rich texture. Bitter yuca is used to form flakes, seeds, and pearls of tapioca.
Look for rock hard yuca. It should an evenly shaped cylindrical spear. Avoid soft spots, blemishes, bald spots, mold, stickiness, or cracks. When the yuca is cut open there should be no streaks or darkening near the skin.
Store at room temperature for up to a week. Refrigerate peeled yuca in water for up to 3 days.
