Shopping
Look for firmly packed, crisp-looking leaves. The head should feel heavy for its size. Avoid browning, yellowing, wilted, smelly leaves.

Storage
Refrigerate cabbage tightly wrapped in plastic for up to a week.

Varieties

Green Cabbage:  Smooth, dark to pale
green outer leaves. Inner leaves are pale
green or white.

Red Cabbage:  Deep ruby red to purple
outer leaves. White veins or streaks on the
inside. Its texture is tougher than that of
green cabbage.

Savoy Cabbage:  Crinkled, ruffly
yellow-green leaves. Less compact head than
